Raw Sun-dried Tomato Dairy Free Cheese

The flavour of tomato pairs wonderfully with just about anything, creating a great vibrant orange cheese for crackers and platters.

 

Dairy free, lactose free, gluten free, sugar free, vegan, raw, plant based

 

Ingredients

2 cups cashews (soaked in water overnight)

1 lemon, Juiced

1/4 cup shallots, chopped

1/2 cup sun-dried tomatoes

1 tablespoon olive oil

2 cloves of garlic, crushed

1 tablespoon nutritional yeast

2 teaspoon onion powder

1 teaspoon chili flakes

Salt and pepper

1 teaspoon agar agar

1/2 cup water

 

Method

Drain and rinse the cashews and blend until it’s very smooth and no graininess is left. You can add some fresh water to get the desired consistency. Add lemon, shallots, tomato, oil, garlic, yeast, onion powder, chili flakes, salt and pepper and puree until smooth. Boil 1 teaspoon of agar agar with ½ cup of water for 2 minutes. While the blender is on and you have a vortex add the boiled agar agar to the vortex. Pour immediately into a mould. Place in fridge to set for at least 3 hours. Turn out onto a cheese platter and enjoy.
