Raw Mayonnaise

This raw mayonnaise is deliciously creamy thanks to the cashews. It's a wonderful alternative to the traditional mayonnaise containing dairy and eggs. Keeps well in the fridge.

Dairy free, gluten free, egg free, sugar free, raw, vegan


Ingredients
1 cup raw cashews, soaked 2 +hours
¼ cup water
¼ cup lemon juice
2-3 dates, pitted
1 teaspoon salt
1 teaspoon pepper
1 teaspoon onion powder
½ teaspoon garlic powder
¼ cup cold pressed olive oil (to be added last)

Method
After soaking the cashews rinse and drain. Place all ingredients in blender except the oil.  Blend until smooth and creamy. Keep blending until the graininess disappears. While blending a vortex is created then slowly add the olive oil until emulsified.
