Raw Pea Pesto Recipe

Pea pesto to my pallet is a sweet pesto. This pea pesto is so versatile. Tastes amazing as a pizza sauce. Try it as an entrée. Spreading pea pesto on a cucumber slice and topping with sundried tomato. Or add the pea pesto to the bottom of a small shot glass topping with seasonal salad. Great to take to any party. If you love your pea and mint combination add some mint leaves to the recipe. Simple and extremely tasty.

Recipe
Ingredients
100g peas
¼ cup macadamia soaked for 2 hours
¼ cup parsley
50ml olive oil
1 garlic minced
1 shallot
Salt and pepper
Little water
Method
Defrost frozen peas. Drain and rinse the macadamias.  Puree the macadamia with a bit of water first. Don't make this too runny as texture should be thick. Then add remaining ingredients. Puree until you reach your desired texture.
