Dairy Free Garlic Cheese

Raw Garlic Dairy Free Cheese

Who says you can’t enjoy cheese on a vegan lifestyle. Slice it up and pop on a cracker, so good! Change the ingredients to suit your taste preferences.  
     
Dairy free, lactose free, gluten free, sugar free, vegan, raw, plant based
     
Ingredients
2 cups cashews (soaked on water over night)
1 lemon, juiced
1 tablespoon olive oil
2 cloves of garlic, crushed
2 teaspoon nutritional yeast
2 teaspoon onion powder
1 teaspoon chili flakes
2 tablespoons fresh chives, chopped very finely (optional)
Salt and pepper
1 teaspoon agar agar
½ cup water
     
Method
Drain and rinse the cashews and blend until very smooth and no graininess is left. You can add some fresh water to get the desired consistency. Add lemon, oil, garlic, yeast, onion powder, chili flakes, salt and pepper and puree until smooth. Boil 1 teaspoon of agar agar with ½ cup of water for 2 minutes. While the blender is on and you have a vortex add the boiled agar agar to the vortex. If you have chives add them now and blend for a short time being careful not to mulch too much. Pour immediately into a mould. Place in fridge to set for at least 3 hours. Turn out onto a cheese plater and enjoy.
