Raw Beetroot Dip Recipe
This raw beetroot dip recipe is incredibly simple and versatile. With such a vibrant pink colour, it brightens up any platter and goes deliciously with crackers and slices of raw vegetables like carrot, cucumber, capsicum, tomato and many others. A brilliant way to create your very own rainbow plate of vibrant nutrition.
Beetroot is an excellent source of folate, fibre, manganese and potassium- all of which are crucial for overall health and well-being. This nutrient packed healthy dip is also dairy free, gluten free, egg free, sugar free, raw, vegan and plant based - making it ideal for those with intolerances and allergies.
It can also be used as a nutritious spread or simply enjoyed on its own! Packed with flavour, it's a welcome addition to any picnic or party platter.

Ingredients (Makes: 1 cup)
1 cup raw beetroot
¼ red onion
Handful of parsley
½ lemon Juiced
¼ cup walnuts
¼ cup olive oil
½ tablespoon apple cider vinegar
1 teaspoon mustard powder
salt and pepper
Peel and chop the beetroot into small cubes and puree. Don't over puree or you'll have a beetroot juice.
Add the red onion, parsley, lemon juice, walnuts, olive oil, apple cider vinegar and seasonings and blend until smooth or to your desired texture.
