Spicy Tomato Gazpacho
Raw Spicy Tomato Gazpacho Recipe
This is a great way to eat your raw vegetables but in a different form! Gazpacho is incredibly easy to make combining tomatoes, cucumber and capsicum. The idea of eating raw vegetables as a refreshingly cold soup originated from the hot summers in Spain and is a stable of the Mediterranean diet. Try adding more chipotle if you like a little more spice.
Gluten free, raw, nut free, sugar free, egg free, dairy free, vegan, plant based
Ingredients
½ cup sundried tomatoes which have been marinated in oil and herbs (I include 1 tablespoon of the oil and herbs)
¼ cup water
1 ½ tablespoons lemon juice
½ cup celery
2 tablespoon fresh coriander
1 teaspoon chipotle powder
Salt and Pepper
2 shallots
1 zucchini
1 tomato
1 red pepper
½ cup fresh corn kernels
Method
Puree all ingredients except corn until smooth or to your liking. Mix in corn last and decorate with chopped capsicum. Enjoy!
