Raw Avocado Cilantro Soup

This really simple soup is filled with iron, vitamin K and antioxidants. Besides being delicious it’s perfect for any main meal. I love the colour of this soup. You can’t go wrong with green!

Dairy Free, gluten free, egg free, sugar free, raw, vegan, plant-based

 

Ingredients
1 avocado
1 small zucchini, chopped
2 stalks celery, chopped
1 cup raw spinach
1 cup raw kale
1/4 cup fresh parsley
1/4 cup fresh cilantro
2 slices green capsicum
1/8 cup raw onion, chopped
1 small clove garlic
1/4 cup raw almonds, preferably soaked overnight then drained and rinsed
1 cup filtered water
Juice of 1/2 lemon
1 teaspoon of chili flakes
Salt and pepper to taste

 

Method
Place the almonds with the water and puree until smooth and creamy and all graininess has gone. Place remaining ingredients in the blender and process to your desired consistency.
