Raw Creamy Brussels Sprout Salad with Peas and Dill
This is one of my favourite salads. I always have a jar of raw mayonnaise in the fridge so it’s easy to toss all the ingredients together. Look at my ‘Dips sauces and dressings’ section for my raw mayonnaise recipe. The sweetness of the peas is what makes this recipe so delicious. I forgot to mention Brussels sprouts which are part of the cabbage family, are absolutely delicious raw. I think they taste better raw than cooked! Enjoy
Gluten free, dairy free, egg free, sugar free, raw, vegan
Ingredients
1 cup sweet peas
3 shallots
2 cups baby Brussels sprouts
1 tablespoon nutritional yeast (optional)
1 tablespoon apple cider vinegar
2 teaspoons tamari
2 teaspoon fresh lemon juice
1 tablespoon fresh dill
½ cup raw mayonnaise (see my raw mayonnaise recipe in the 'Dips, Sauces and Dressing' section)
Method
Wash and finely slice the Brussels sprouts. Chop finely the shallots and combine with the peas and Brussels sprouts. Combine and whisk the remaining ingredients and mix into the salad.
