Raw Vietnamese Rolls Recipe
What a wonderful hit of flavor with those raw ingredients. So fresh and fragrant. This traditional Vietnamese recipe is perfect for raw food and a recipe the whole family will love.

Peanut Dipping Sauce
4 Tablespoons Tamari
2 tablespoons Peanut Butter
1 tablespoon honey
2 teaspoons apple cider vinegar
1/4 teaspoon garlic powder
2 teaspoons sesame oil
Optional: Chili to you liking
Optional garnish: crushed peanuts, sprinkle of cilantro
10 spring roll rice paper wrappers
1 large carrot, peeled sliced finely
1 large cucumber sliced finely
1 red pepper sliced finely
1/3 cup chopped purple cabbage
1 avocado, sliced
Handful fresh cilantro
5 lettuce leaves
Sesame seeds for garnish (optional)
Peanut dipping sauce: Whisk everything together in a bowl until mixed well. Add some water if you would like the constancy thinner.
Prepare the rice paper wrappers: Pour warm water into a large bowl. Submerge the rice paper into the warm water until they soften. Remove the rice paper from the water and place on a tea towel to soak up the excess water. Place a lettuce leaf on the bottom and then few sticks of cucumber, carrot, red pepper, avocado and a sprinkle of cabbage and cilantro and roll them up firmly tucking in the edges. Cut in half, and place on tray with dipping sauce.
