Spicy Capsicum Pasta
Raw Spicy Capsicum Pasta
This very fresh pasta is full of raw vegetables. You heard me, full of nothing except vegetables, and it tastes great! The grated zucchini is the pasta. The sauce is a puree of fresh capsicum, tomatoes and chili powder. The capsicum sauce is very versatile, it can be used as a dip, sauce, spread, or even a soup. Don’t forget to taste test the sauce and add more chili powder to your liking. DELICIOUS!
Dairy free, gluten free, sugar free, egg free, nut free, vegan, plant-based, raw
4 capsicums, deseeded
½ cup sundried tomatoes
2 garlic crushed
¼ small onion
½ lemon, juiced
1 tablespoon fresh oregano
1 tablespoon fresh thyme
1 teaspoon of chili powder or fresh chilli if preferred
1 teaspoon pepper
2 teaspoon salt
1 zucchini grated into ribbons for pasta
Sprinkle 1 ½ teaspoons of salt over the zucchini ribbons and set aside.
Place all other ingredients in blender and wiz until smooth or to your desired texture.
Rinse and drain the salt from the zucchini in warm water. This will also help soften the zucchini imitating the texture of traditional pasta.
Toss the sauce gently through the pasta and serve immediately.
