Raw Cannelloni Recipe

This is such a wonderful tasty fresh meal. Packed full of Plant-Based ingredients its highly nutritious.

Dairy Free, Gluten Free, Egg Free, Sugar Free, Raw, Vegan
Ingredients
Cannelloni
3 medium zucchini, cut into thin slices lengthwise
2 cups cashews, soaked for 2 hours and rinsed
1 tablespoon of fresh thyme
1 tablespoon parsley
2 teaspoon onion salt
1 garlic crushed
3 tablespoons fresh lemon juice
1 tablespoon nutritional yeast
1 teaspoon sea salt
1 teaspoon pepper
Marinara Sauce
1 ½ cup ripe tomato, cut in quarters
½ cup sun-dried tomatoes
1 tablespoon olive oil
1 garlic clove crushed
2 tablespoons chopped black olives
1 teaspoon dry oregano
Salt, Pepper to taste
Chili flakes, to taste
Method
Spread zucchini slices in a tray and sprinkle with a little salt and lemon juice. This softens the zucchini making them easy to roll into the shape of cannelloni.
In a food processor, blend cashew nut and all the remaining ingredients until you reach a smooth paste.

Lay three zucchini slices side-by-side lengthwise, slightly overlapping. Tablespoon the cashew past at the narrow end and start rolling. 
Top with the Marianna sauce and decorate.
