Raw Pistachio Cake Recipe

This cake is pure decadent delight. Smooth chocolate mousse spread on top of a crunchy sweet base. You would think that being raw you can eat the whole cake. Well thankfully this cake is dense with nutrients and plant base oils so your body should tell you when it’s had enough. This is such a wonderful easy recipe. Best kept in the freezer.

 

Dairy free, Gluten Free, Egg free, Sugar Free, Raw, Vegan

Ingredients

Base
1 ½ cup dates soaked in water for 30 min
1 ½ cup pistachios soaking for at least 2 hours
1 cup desiccated coconut
¾ cup coconut oil
1 teaspoon salt

Topping
1 banana
1 cup cashews soaking for at least 2 hours
3 tablespoons rice syrup
2 tablespoons cacao powder

Pistachios for decoration

Method

Base; drain and rinse the nuts and drain the dates. Process all ingredients into coarse crumbs and press into cake tin and freeze.

Topping; puree ingredients until smooth and creamy. Spread on base and freeze. This cake does belong in the freezer. Decorate with Pistachios.
