Raw Mint Slice

Mint slice made from fresh wholesome nuts, avocado and fresh mint picked from the garden!! Yum. A great slice to freeze. I've decorated this slice with minted buckwheat which is a mixture of fresh mint, sprouted buckwheat and xylitol, then dehydrated until crunchy.

Dairy free, gluten free, egg free, raw, vegan

 

Ingredients

Base:
1 cup walnuts soaked for 2 hours
1 cup almonds soaked for 2 hours
1 cup dates soaked until soft (with water drained)
3/4 cup coconut oil
2 tablespoons cocoa powder
                                              
Mint layer:
1 avocado
1/3 cup mint leaves, chopped
2 tablespoons xylitol
2 tablespoons rice syrup
½ cup coconut butter
1 teaspoon vanilla

 

Method

Base:
Drain and rinse nuts. Process all ingredients until bread crumb consistency, press into slice tin and freeze.

Mint Layer:
Puree all ingredients until smooth and spread on top of base and put in freezer.
Once chilled or frozen decorate then slice.
