Raw Caramel Filling
Ingredients1 cup dates soaked and drained (soak dates for minimum of 30 minutes in warm water - keep the juice!)
1/3 cup almond butter
1/4 cup coconut oil
2 tablespoons maple syrup
1 teaspoon vanilla essence
1/2 teaspoon salt
Puree the soaked dates with the almond butter, coconut oil, maple syrup, vanilla essence and salt until completely smooth.
If you find that the mixture is too thick to blend adequately, add some of the date water, a teaspoon at a time. It's important not to add too much, as this raw caramel filling is intended to be a relatively thick texture.
This can be stored in an airtight container in the fridge for up to 3 weeks and in the freezer for up to 4 months.
