Caramel Filling


Raw Caramel Filling 

This is one of our most popular recipes as it is incredibly tasty, simple and versatile.
It can be used in place of traditional caramel and can be added to brownies, tarts, slices, decorated with vibrant and juicy fresh berries for a simple and elegant dessert or used as an icing on cakes.
Rich in nutrition, healthy fats and free from any processed sugars, this is a perfect substitute for store bought options. Its a great treat for both children and adults. A perfect example of how raw whole food nutrition can be delicious, achievable and easily integrated into family favourites using just a few simple ingredients.  
Dairy free, gluten free, egg free, sugar free, raw, vegan



1 cup dates soaked and drained (soak dates for minimum of 30 minutes in warm water - keep the juice!)
1/3 cup almond butter
1/4 cup coconut oil
2 tablespoons maple syrup
1 teaspoon vanilla essence
1/2 teaspoon salt


Puree the soaked dates with the almond butter, coconut oil, maple syrup, vanilla essence and salt until completely smooth.

If you find that the mixture is too thick to blend adequately, add some of the date water, a teaspoon at a time. It's important not to add too much, as this raw caramel filling is intended to be a relatively thick texture.

This can be stored in an airtight container in the fridge for up to 3 weeks and in the freezer for up to 4 months.
