Raw Apple Caramel Slice Recipe


This simple Apple Caramel Slice is a delicious combination of zesty, juicy apples and sweet caramel.  Packed with nutrition, healthy fats, fibre and whole food goodness, this is the perfect guilt-free sweet treat, free from processed sugars and preservatives commonly found in store-bought sweet treats.


Simply made using just a handful of ingredients, this is a guaranteed crowd pleaser and a slice that goes down a treat at picnics or as part of a dessert platter when entertaining.  An ideal "make ahead" option, this can also be stored in the freezer for up to 4 months (if it lasts that long!)


This is a great sweet option for those who are coeliac or who suffer with wheat, dairy or egg allergies.  So delicious, this is a perfect substitute for traditional wheat based recipes.

Using raw, vegan and plant based ingredients, this is a convenient and healthy snack to have on hand in the fridge.

Ingredients

Base:
1 cup walnuts soaked in water for 30 minutes
1 cup raisins
1 teaspoon Himalayan pink salt
1 teaspoon vanilla essence
¼ cup coconut oil

Caramel sauce:
2/3 cup raw almond butter
1 ½ cups dates soaked in ¼ cup water
¼ cup rice syrup
½ teaspoon Himalayan pink salt
1 teaspoon vanilla essence

Apple topping:
3 apples sliced finely
¼ cup coconut sugar
¼ cup lemon juice
1 teaspoon vanilla

Method

Before you get started soak all your nuts and dates in water for around 30 minutes.

Crust: Drain and rinse the walnuts. Process all ingredients until you get a crumbly texture.  Press into a slice tin and place in the freezer for around an hour.  This will quickly help the base to firm in time for the caramel.

Caramel sauce: Drain the dates and set aside the date water. Puree all the ingredients of the caramel sauce until the texture is smooth and silky. Add extra date water if you require more liquid to puree remembering you still want the caramel quite thick. Spread on the chilled base and return to freezer.

Apple Topping: Try and dissolve as much of the coconut sugar in the lemon juice as you can before mixing all ingredients together thoroughly.  The lemon juice will prevent the apple from discolouring. Place soaked apples neatly on top of the caramel and chill in the fridge for half an hour.
