Raw Porridge with Crunchy Granola Recipe

 

This is a wonderful filling recipe to start the day. A little bit decadent with the added crunchy granola but such a good contrast to the soft porridge. You can really create a breakfast with all the wonderful seasonal flavours and colours. Try these berries or tropical fruits for that added yumminess.

 

Dairy free, Wheat Free, Sugar Free, Egg Free, Vegan, Raw, Plant-Based

 

 

Ingredients

Porridge

1 cup oats

1 ½ cups water

1 grated apple, peeled and cored

1 tablespoon chia seeds

1 tablespoon honey

 

Oat Granola

1 cup oats

¼ cup walnuts

1 tablespoon coconut oil

1 tablespoon nut butter

2 tablespoon honey

¼ cup dried coconut

 

Method

Porridge

Soak oats overnight and in the morning drain and rinse.
Blend all ingredients with some of the drained water until creamy.


Oat Granola

Mix the wet ingredients until combined then stir in the dry ingredients. Place in fridge to chill until the coconut oil hardens turning the granola crisp. This will only take around 15 minutes.

 

Method

Place porridge as the base in a serving glass and top with chilled granola for crunch. Decorate with fresh fruit in season. Serve your creation immediately. Enjoy!
