Banana Pancakes

Raw Banana Pancake Recipe

These healthy gluten free, lactose free pancakes for breakfast or even dessert are amazingly delicious. I can never go back to a traditional pancake after eating these. They are so light. Made mostly of bananas so there is no need to add sweetener though I sometimes find the bitterness of the cacao pancakes needs some extra honey. Please taste test as you go.

Gluten Free, Dairy Free, Lactose Free, Sugar Free, Egg Free, Nut Free (except for decoration), Raw, Vegan, Pant Based

Ingredients

5 ripe bananas
1/2 cup desecrated dried coconut
1/2 cup ground flax seed
1 tsp vanilla
Pinch salt
1/3 tablespoons cacoa powder
1/3 tablespoon cinnamon powder
1/3 tablespoon Matcha powder
Fresh or frozen fruit and nuts (optional) for decoration

Method

Puree banana, coconut, flax meal, vanilla and salt until smooth.

Divide this mixture into 3 and place in separate bowls. Add to each of the bowls the 3 flavours, cacoa, cinnamon and matcha. 

Spread the pancake mix in circles approximately 5mm thick on baking paper on dehydrator tray.  Dehydrate for 12 hours over night at 42 degrees or until they are firm similar to cooked pancakes. Decorate with fruit and nuts. 

These last well in the fridge and of course are deliciously warm directly from the dehydrator. If you don’t have a dehydrator you can place in oven on a medium temperature of 130 degrees but keep an eye on them as they will cook faster than the dehydrator. You may need to flip them when they firm up.
